They differ in more than price. 80/20 carries the most nickel and the highest oxidation resistance, for service to 1200 °C as a heating element; 70/30 raises chromium to 29–31% for the hottest duty, approximately 1250 °C, and holds up well in alternating oxidising and reducing atmospheres; 60/15 replaces roughly a quarter of the nickel with iron, which lowers cost and raises resistivity but caps service at about 1150 °C.
